You may want to try my way of frying talapia. Everyone loves the way the crispy batter comes out and how I use even the excess batter.

Ingredients
  • 4 pieces of tilapia filet
  • 1 cup flour
  • 1 cup dry bread crumbs or more as needed
  • salt, pepper and other seasonings of choice
  • 2 large eggs
  • 1/2 cup beer, lager or ale, cold from the refrigerator
  • oil to fry

Directions
  1. The following is how I fry fish. We enjoy the taste and the texture.
  2. In a bowl mix eggs and beer.
  3. Have another plate with seasoned flour and another plate of bread crumbs.
  4. Dip fish filets into egg-beer mixture, then roll in flour, dip into egg mixture again and lastly roll into breadcrumbs.
  5. Fry in hot oil, turning only once until browned on each side and fish is fork tender.
  6. Place filets on paper toweling to absorb any excess oil.
  7. Mix any remaining flour, breadcrumbs and egg-beer mixture into a batter.
  8. Fry spoonfuls of the batter in hot oil until puffed and golden on each side.
  9. Serve along with the fish.
