Got this off the side of a bag of Idaho potatoes years ago and it is a fam favorite! Pretend the spinach in the buttery mashed potatoes make it GOOD for you!

Ingredients
  • 2 pounds potatoes, peeled, cubed, boiled
  • 8 ounces spinach, washed, deveined, chopped & microwaved
  • 1 envelope dry vegetable soup mix, pkt (Lipton Savory Herb & Garlic)
  • 1/2 stick butter
  • 1/2 cup skim milk

Directions
  1. Put hot cooked potatoes into large mixer bowl and whip along with butter. Add soup mix and milk whip again. Mix in cooked spinach and serve. Yum!
