Florentine Mashed Potatoes

Got this off the side of a bag of Idaho potatoes years ago and it is a fam favorite! Pretend the spinach in the buttery mashed potatoes make it GOOD for you!
Ingredients
- 2 pounds potatoes, peeled, cubed, boiled shopping list
- 8 ounces spinach, washed, deveined, chopped & microwaved shopping list
- 1 envelope dry vegetable soup mix, pkt (Lipton savory herb & garlic) shopping list
- 1/2 stick butter shopping list
- 1/2 cup skim milk shopping list
How to make it
- Put hot cooked potatoes into large mixer bowl and whip along with butter. Add soup mix and milk whip again. Mix in cooked spinach and serve. Yum!
