Baba made this for me on my vacation and it is sooooo good - better than any of that store bought stuff. This is great on ice cream and even better if you throw a heaping spoonfull in a cold glass of tart lemonade.

Ingredients
  • 2 pints strawberries - should equal 2 cups when mashed
  • 4 cups sugar
  • 1 box Sure Jell
  • 3/4 cup water
  • 5 Ball Plastic Freezer Jars (I ♥ these)

Directions
  1. ~Wash and rinse jars
  2. ~Clean strawberries
  3. ~Mash strawberries in a large bowl with potato masher leaving chunks (mmm... chunks) You can also do this in a food processor - but make sure not to over process - must have those glorious chunks!!!
  4. ~Pour sugar over strawberries and mix well - cover and let sit for at least 10 minutes, stirring occasionally
  5. ~In a sauce pan combine the water and Sure Jell over high heat - whisk constantly until mixture comes to a boil - keep whisking and let mixture boil for 1 minute then remove from heat
  6. ~Pour Sure Jell mixture over strawberry mixture and stir for 3 minutes - sugar should be dern near completely gone
  7. ~Ladle this strawberry goodness into your containers leaving a 1/2-in from the top - clean up any spills or drips with a clean cloth - fasten on lids
  8. ~Let jars of jam set at room temp for 24 hours before storing

  9. Storage:
  10. Freezer - will last for 1 year - thaw in fridge before using
  11. Fridge - will last up to three weeks

Good timing when strawberries are in season....in the grocery store. SOON locally! I want to make this with my grandson - he LOVES strawberry jelly! Welcome back, too. Hope your trip home was a good one...you sure brought back a good recipe.


I spent last summer at my sister's in Oregon, where she lives on 40+ acres with lot's and I mean lots of blackberry bushes. We made TONS of blackberry freezer jam with those plastic freezer jars. They are fantastic. They stack beautifully if you have a small freezer. Got them at Walmart.Thanks for the memories!


Can almost taste this now! I'm going to look for those plastic freezer jars, they sound very handy!
