Oatmeal Cake Recipe

This was another one of my mothers. I don't know where it came from but we think it is good.

Ingredients
- 1 1/4 cups boiling water
- 1 cup quick oats
- 1/2 cup shortening (I use oil)
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/3 cup flour
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Directions
- Pour boiling water over the oats. Let stand 20 minutes.
- Cream shortening, white sugar, brown sugar.
- Mix with the oats.
- Add eggs and vinalla.
- Sift together and add to the above flour, soda, cinnamon, salt.
- Bake in 9" by 13" pan 25 minutes at 350 degrees or until done.
- Then put on topping.
- Topping
- 1 cup brown sugar
- 1/2 cup cream
- 1 cup coconut
- 4 tablespoons margarine, melted
- Mix and put on top of cake.
- Broil until it bubbles.

We used to have this back in the day and it was delicious - thanks so much for sharing the recipe. I cannot wait to taste it again - that broiled topping is yummo.

How funny - I just posted an oatmeal cake last night, wondering if anyone would remember this long-forgotten cake! I love your version of the broiled topping, and will have to try it - I'm so glad others remember this delicious, moist cake (and oatmeal is GOOD for you, so I almost feel healthy eating it!)...thanks!
