Golden Lemon Cake Recipe
This tangy cake makes a good summer dessert.

Ingredients
  • Cake:
  • 1 box white cake mix
  • 3/4 cup vegetable oil
  • 3/4 cup warm water
  • 4 eggs
  • 1 3oz package lemon flavored gelatin
  • Glaze:
  • 2/3 cup orange juice
  • 3 tablespoons sugar
  • 2 tablespoons lemon juice
  • 3/4 confectioners' sugar

Directions
  1. Cake:
  2. Preheat oven to 350 degrees.
  3. Grease and flour one 12-cup tube pan.
  4. Combine ingredients in a large mixing bowl.
  5. Beat at low speed for 2 minutes.
  6. Pour batter into prepared pan and bake for 45-50 minutes or until inserted toothpick comes out clean.
  7. Let cake cool in pan for 10 minutes then turn out onto wire rack.
  8. Glaze:
  9. Combine ingredients in a small saucepan.
  10. Bring to a boil and simmer for 5 minutes. Let cool at least 10 minutes.
  11. Poke holes in top of cake using fork or toothpick.
  12. Slowly pour glaze over warm cake. Place a pan underneath to catch any runoff.
  13. Let cake cool completely before cutting.
  14. Note:
  15. For an extra tangy cake,use lemon supreme cake mix and replace water with thawed,heated lemonade concentrate.
