Tempura Chicken With Quadruple Saucey Goodness

- 3 boneless skinless chicken breasts shopping list
- 1c very cold water shopping list
- 1c flour shopping list
- 1 egg shopping list
- cornstarch shopping list
- onion powder, garlic powder, cayenne, pepper and salt to taste shopping list
- oil for frying shopping list
- chili Strawberry Sauce: shopping list
- 1/4c strawberry jam shopping list
- 1t chili paste shopping list
- 1 splash rice vinegar shopping list
- Chinese Honey Mustard: shopping list
- 1 spoon chinese hot mustard shopping list
- 1+ spoons honey (to taste) shopping list
- Ponchu-yee Sauce (this is a totally made up name! by a 3yr old. please don't google it!): shopping list
- 2T red bean paste (the smooth kind you can get in a plastic bag) shopping list
- 1T rice vinegar shopping list
- 1t honey shopping list
- 1 thumbtip size piece of ginger - grated shopping list
- 1 grind pepper shopping list
- bottle of your fave Tonkatsu sauce (we use Bulldog) shopping list
How to make it
- Slice your chicken into strips and coat in cornstarch
- Heat the oil to your fave frying temperature (I don't have a thermometer so I just guess and hope nothing catches on fire!)
- Beat your egg into the cold water then mix in the flour and seasonings
- Dip chicken pieces in tempura batter then straight into the oil - don't bother knocking off the extra batter and work in batches so you don't crowd the pan too much!
- Fry, turning regularly, until golden outside and chicken is cooked on the inside (my pieces were more like LARGE tenders so it took about 7 minutes to cook thru)
- Remove chicken to a grease catching device (plate lined with paper towel, your cookie rack, whatever)
- Between batches mix up your sauces. Just put each set of ingredients into a bowl and whisk together. Sit your tonkatsu out in the bottle or squeeze into a pretty serving dish. (The red bean/ginger was our fave on the chicken but it's not too good by itself! )
