How to make it

  • Slice your chicken into strips and coat in cornstarch
  • Heat the oil to your fave frying temperature (I don't have a thermometer so I just guess and hope nothing catches on fire!)
  • Beat your egg into the cold water then mix in the flour and seasonings
  • Dip chicken pieces in tempura batter then straight into the oil - don't bother knocking off the extra batter and work in batches so you don't crowd the pan too much!
  • Fry, turning regularly, until golden outside and chicken is cooked on the inside (my pieces were more like LARGE tenders so it took about 7 minutes to cook thru)
  • Remove chicken to a grease catching device (plate lined with paper towel, your cookie rack, whatever)
  • Between batches mix up your sauces. Just put each set of ingredients into a bowl and whisk together. Sit your tonkatsu out in the bottle or squeeze into a pretty serving dish. (The red bean/ginger was our fave on the chicken but it's not too good by itself! )

    This sounds really wonderful. And I got a kick out of the sauce story! Thank you for sharing! Also I loved the turtle plate you served it in!
