I ran out of panko to make chicken katsu so I made this instead! My usual disclaimer applies -I don't really measure much (but I'm working on it!) so just go with it! ;-)

Ingredients
  • 3 boneless skinless chicken breasts
  • 1c very cold water
  • 1c flour
  • 1 egg
  • cornstarch
  • onion powder, garlic powder, cayenne, pepper and salt to taste
  • oil for frying
  • Chili Strawberry Sauce:
  • 1/4c strawberry jam
  • 1t chili paste
  • 1 splash rice vinegar
  • Chinese Honey Mustard:
  • 1 spoon chinese hot mustard
  • 1+ spoons honey (to taste)
  • Ponchu-yee Sauce (this is a totally made up name! by a 3yr old. please don't google it!):
  • 2T red bean paste (the smooth kind you can get in a plastic bag)
  • 1T rice vinegar
  • 1t honey
  • 1 thumbtip size piece of ginger - grated
  • 1 grind pepper
  • bottle of your fave Tonkatsu sauce (we use Bulldog)

Directions
  1. Slice your chicken into strips and coat in cornstarch
  2. Heat the oil to your fave frying temperature (I don't have a thermometer so I just guess and hope nothing catches on fire!)
  3. Beat your egg into the cold water then mix in the flour and seasonings
  4. Dip chicken pieces in tempura batter then straight into the oil - don't bother knocking off the extra batter and work in batches so you don't crowd the pan too much!
  5. Fry, turning regularly, until golden outside and chicken is cooked on the inside (my pieces were more like LARGE tenders so it took about 7 minutes to cook thru)
  6. Remove chicken to a grease catching device (plate lined with paper towel, your cookie rack, whatever)
  7. Between batches mix up your sauces. Just put each set of ingredients into a bowl and whisk together. Sit your tonkatsu out in the bottle or squeeze into a pretty serving dish. (The red bean/ginger was our fave on the chicken but it's not too good by itself! )
