Tuna Chickpea Salad

- 3 cans of drained chickpea or white kidney beans shopping list
- 3 can albacore tuna in water (6 oz) drained shopping list
- 1 large tomato chopped or 20 cherry tomatoes halved shopping list
- 1 bunch of scallions, chopped shopping list
- sundried tomatoes slivered to taste (optional) shopping list
- 2 tbsp capers drained (optional) shopping list
- 2 tbsp red wine vinegar shopping list
- 4 tbsp extra virgin olive oil shopping list
- salt & pepper to taste shopping list
- parmesan cheese sprinkled on top shopping list
- cook pasta (spagetti, elbow, or whatever one you prefer)(an 8 oz to 12 oz box) shopping list
- Drain and mix in with salad. shopping list
How to make it
- Mix all to well blended.
- Best served at room temperature
- Serve with toasted bread
