Tuna Chickpea Salad Recipe
Had this at a friends party and everyone loved it, a good tuna like albacore you will not get a real fishy flavor. All flavors blend nicely together

Ingredients
  • 3 cans of drained chickpea or white kidney beans
  • 3 can albacore tuna in water (6 oz) drained
  • 1 large tomato chopped or 20 cherry tomatoes halved
  • 1 bunch of scallions, chopped
  • sundried tomatoes slivered to taste (optional)
  • 2 tbsp capers drained (optional)
  • 2 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • salt & pepper to taste
  • Parmesan cheese sprinkled on top
  • Cook pasta (spagetti, elbow, or whatever one you prefer)(an 8 oz to 12 oz box)
  • Drain and mix in with salad.

Directions
  1. Mix all to well blended.
  2. Best served at room temperature
  3. Serve with toasted bread

This sounds yummy!


Tried this today, brilliant, added a small green pepper & some mixed pepper corns,& chilled in the fridge, goes well with steak, nice one !

Alterations


Have you considered using the dry packed tuna in the envelopes? You might get even more of a flavor hit.
