Cadillac Oysters

- 3 dozen fresh oysters shopping list
- 10 oz. champagne shopping list
- 4 shallots, finely chopped shopping list
- dash of pepper shopping list
- 2 to 3 tsp. fresh lemon juice shopping list
- 3 egg yolks, well beaten shopping list
- 1/4 cup butter shopping list
How to make it
- Shuck and rinse oysters and return to cleaned half shells.
- In a heavy saucepan simmer 8 oz. of champagne, shallots and pepper until champagne almost evaporates.
- Mix lemon juice, remaining champagne and egg yolks.
- Pour on reduced mixture and thicken over low heat.
- Add butter in small amounts and whisk until blended.
- Pour over oysters and broil until bubbly and brown.
