Finnish Trobie Cookies Recipe

My grandmother was from Finland and this was my dad's favorite cookie. Crisp with a date center. No eggs are required for this recipe.

Ingredients
- 1 cup shortening - part butter
- 1 cup brown sugar
- 2 cups flour
- 1/2 tsp. salt
- 1 tsp. baking soda dissolved in 1/2 cup sour milk
- 2 cups quick cooking oats
- Recipe for date filling:
- 1 lb. dates cut up small
- 1 cup sugar
- 1 cup water. Cook until thick. Cool.
Directions
- Cream sugar and shortening.
- add alternatly with flour and sour milk
- then stir in oats. Chill dough
- Roll dough quite thin and cut into circles.
- Bake at 375 degrees for 10 or 12 minutes.
- When cool, add filling and put together sandwich style.
- Note: This recipe is quite old and I wrote it as it was.
