Finnish Trobie Cookies Recipe
My grandmother was from Finland and this was my dad's favorite cookie. Crisp with a date center. No eggs are required for this recipe.

Ingredients
  • 1 cup shortening - part butter
  • 1 cup brown sugar
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda dissolved in 1/2 cup sour milk
  • 2 cups quick cooking oats
  • Recipe for date filling:
  • 1 lb. dates cut up small
  • 1 cup sugar
  • 1 cup water. Cook until thick. Cool.

Directions
  1. Cream sugar and shortening.
  2. add alternatly with flour and sour milk
  3. then stir in oats. Chill dough
  4. Roll dough quite thin and cut into circles.
  5. Bake at 375 degrees for 10 or 12 minutes.
  6. When cool, add filling and put together sandwich style.
  7. Note: This recipe is quite old and I wrote it as it was.
