Cheesy Potatoes Recipe

This puts a nice little spin on old fashioned cheesy potatoes. It makes a big hit at every get together.

Ingredients
- 6 nice size potatoes (small diced)
- 1 can of potato soup
- 1 container 8oz sour cream
- 8oz bag of cheddar cheese
- salt to taste
- pepper to taste
Directions
- preheat oven to 350 degrees
- peel & cut potatoes (small dice)
- set aside
- in a bowl, mix potato soup, sour cream, 3/4 of cheddar cheese and salt and pepper.
- mix in potatoes.
- place mixture in casserole dish
- bake for 20 mins.
- sprinkle remainder of cheese on top and bake for additional 10 mins.
