Ingredients

1/2 cup chopped onion

1 Tablespoon butter or margarine

3/4 Ib. lean ground beef

2 cloves garlic, minced or pressed

1 Tablespoon chili powder

1/2 cup corn, fresh, canned or frozen

1/4 teaspoon each salt, dried sage leaves and black pepper

-----Pueblo Bread------

1 3/4 cups unbleached flour

1/4 cup cracked wheat

1 teaspoon baking powder

1/2 tsp. salt

1 tablespoon soft butter or margarine

3/4 cup warm water

Oil

-----Toppings-----

2 medium tomatoes, seeded,diced

1 avocado, diced

Chopped black olives

Grated Cheddar cheese

Sour cream, optional

Lettuce, optional

Directions

Saute onion in the butter until onion is soft. Add the beef and garlic, cooking until meat is browned. Drain excess fat. Stir in chili powder, corn, salt, sage and black pepper. Cover and keep warm.

To prepare the bread, mix together flour, cracked wheat, baking powder and salt. Add butter and water to form a soft dough. Divide into 4 portions. Roll each into a round about 1/8 inch thick. Fry in hot oil until puffy and brown. Set on paper toweling to drain.

Sprinkle each fried bread with 1/4 of the meat mixture. Top with tomatoes and avocados. Add optional toppings, if desired.
