this is what happens when you roll several recipes into one. make sure you serve it with vanilla ice cream! the picture does it no justice because we had already eaten half by the time it was taken

Ingredients
  • Cake-
  • 2 c. all-purpose flour
  • 1 3/4 c. sugar
  • 2/3 c. cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 c. milk
  • 1 c. water
  • 1/2 c. vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 c. ghiradelli 60% cacao bittersweet chips (or whatever you like)
  • Filling/Frosting
  • 2 c. mini marshmallows
  • 1/3 c. milk
  • 1 1/3 c. ghiradelli 60% cacao bittersweet chips (or other dark chocolate chips)
  • 1/2 c. heavy whipping cream
  • 1/4 c. powdered sugar

Directions
  1. CAKE
  2. combine flour, sugar, cocoa, baking powder, soda, and salt in large mixer bowl
  3. add milk, water, oil, eggs and vanilla extract, blend until moistened
  4. beat for 2 minutes (batter will be thin)
  5. pour into 2 greased and glowered (or pam for baking) 9 inch round cake pans
  6. sprinkle 1/2 cup chocolate chips over each cake
  7. bake at 350F for 25-30 minutes or until toothpick inserted in center comes out clean
  8. cool in pans on wire racks for 10 minutes, remove from pans to wire racks to cool completely
  9. FILLING/FROSING
  10. place marshmallows and milk in large microwave safe bowl. microwave at 50% for 1 minute and stir. repeat until all marshmallows are melted
  11. add chocolate chips, stir until melted and mixture is smooth. if necessary, microwave at 50% for 15 seconds at a time
  12. spread about 1/2 mixture onto one of the cooled cakes as the filling and refrigerate
  13. cool remaining mixture to room temperature
  14. beat whipping cream until stiff gradually adding powdered sugar
  15. gradually stir into remaining chocolate mixture until at desired consistancy for frosing, keep in mind, the mixture will harden slightly in the fridge
  16. spread mixture over entire cake and refrigerate, preferably overnight
  17. serve with vanilla ice cream or a glass of milk! :o)

I like the idea of melting marshmallows and chips for the filling. I have to try it!


Half eaten or not, that looks fantastic! Love the marshmallow and chips and heavy cream in the frosting...that has got to be a taste delight - thanks for sharing it!
