How to make it

  • In a large salad bowl, mix greens and jicama. Arrange onion rings on top. Cut grapefruit and oranges into sections and arrange over onions. Cover and refrigerate for at least 2 hours.
  • Mix the dressing ingredients until well-blended.
  • Just before serving prepare the avocado and add to salad. Add dressing and toss gently.

    Love the crunchiness and sweetness of jicama in a salad - love the grapefruit in this one...would be very refreshing during those dog days of August around here!
