Ingredients
  • Variety of lettuce and spinach to serve 8 hombres
  • 1 1/2 cups jicama, cut into thin strips
  • 1 medium red onion, thinly sliced
  • 1 grapefruit, peeled and white membrane removed
  • 2 oranges, peeled and white membrane removed
  • 1 large avocado, peeled, pitted and sliced just before serving
  • Dressing:
  • 2 tbsp. cider vinegar
  • 2 tbsp. fresh lime juice
  • 1/3 cup olive oil
  • 1 garlic clove, smashed
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1/8 tsp. crushed red chili pepper flakes

Directions
  1. In a large salad bowl, mix greens and jicama. Arrange onion rings on top. Cut grapefruit and oranges into sections and arrange over onions. Cover and refrigerate for at least 2 hours.
  2. Mix the dressing ingredients until well-blended.
  3. Just before serving prepare the avocado and add to salad. Add dressing and toss gently.

Love the crunchiness and sweetness of jicama in a salad - love the grapefruit in this one...would be very refreshing during those dog days of August around here!
