Ingredients

1 Zucchini about ¾ Cup cooked and puréed

12 soda crackers

¼ Cup of cheese (Cheddar, Colby, or a combination with Monterey Jack)

1 Raw egg

1 pinch of black pepper

Directions

Puree the cooked Zucchini or mash with a fork

Add the egg

Crumble the soda cracker with the zucchini mix well with a fork

Add cheese and pepper mix

Bake at 375 for 10 minutes it might take a bit longer the casserole should be firm, all cheese will be melted it should have a slight browning to the top.
