Zucchini Casserole

This was my Grandmothers recipe; it was a staple when my father was growing up and later when my sisters and I were growing up. The same dish can be made with spinach ether frozen or canned in place of the zucchini. Read more You just need to make sure the spinach is well drained. This recipe will make enough for two. For larger groups just add more I don’t use more then two eggs regardless of how much I make. This is an “about” recipe all ingredients are about that measurement this is the first time I have put down exact measurements for this dish. See less
Ingredients
- 1 zucchini about ¾ Cup cooked and puréed shopping list
- 12 soda crackers shopping list
- ¼ Cup of cheese (Cheddar, colby, or a combination with Monterey Jack) shopping list
- 1 Raw egg shopping list
- 1 pinch of black pepper shopping list
How to make it
- Puree the cooked Zucchini or mash with a fork
- Add the egg
- Crumble the soda cracker with the zucchini mix well with a fork
- Add cheese and pepper mix
- Bake at 375 for 10 minutes it might take a bit longer the casserole should be firm, all cheese will be melted it should have a slight browning to the top.
