Ingredients
  • 1 Zucchini about ¾ Cup cooked and puréed
  • 12 soda crackers
  • ¼ Cup of cheese (Cheddar, Colby, or a combination with Monterey Jack)
  • 1 Raw egg
  • 1 pinch of black pepper

Directions
  1. Puree the cooked Zucchini or mash with a fork
  2. Add the egg
  3. Crumble the soda cracker with the zucchini mix well with a fork
  4. Add cheese and pepper mix
  5. Bake at 375 for 10 minutes it might take a bit longer the casserole should be firm, all cheese will be melted it should have a slight browning to the top.
