How to make it

  • Preheat oven to 300 degrees.
  • In a medium bowl combine flour, soda and salt.
  • Mix well with a wire whisk. Set aside.
  • In a large bowl blend sugars using an electric mixer set at medium speed.
  • Add butter and mix to form a grainy paste, scraping the sides of the bowl.
  • Add eggs, peanut butter and vanilla, and mix at medium speed until light and fluffy.
  • Add the flour mixture and mix at low speed until just mixed. DO NOT OVERMIX! (In fact, I just use a large wooden spoon.)
  • Drop by rounded tablespoons onto an ungreased cookie sheet, 1 1/2-inches apart.
  • With a wet fork gently press a crisscross pattern on top of cookies. In order to keep dough from sticking to the fork as you proceed, dip the fork in water after each cookie is flattened.
  • Bake for 19-22 minutes until cookies are slightly brown along the edges.
  • Transfer cookies immediately to cool surface with spatula.
  • As a variation, add 2 cups coarsly chopped semi-sweet chocolate bar or 2 cups semi-sweet chocolate chips to the flour mixture, then bake as directed.

    Will preface by saying I'm a baker with 50 years of experience. I LOVE peanut butter cookies. So sorry I can't endorse this recipe. I followed it exactly, including stirring in the dry ingredients. Fat to flour ratio too high, sugar content too high, one too many eggs, lacks peanut flavor, it gets lost in the sugar, and bakes up to a flat stick-to- the tooth cookie due to the reasons above. It needs more flour, less sugar, and one less egg. Need a portion of the fat to be shortening to retain moisture. Looking forward to try other recipes!

    I halved the mixture and used two eggs. The cookies spread a lot - baked to the perfect size. Quite delicious but not as hearty and chewy as I expected - they were quite light in texture in the middle.

    Wonderful. I changed it a little tho. 1/4 more flour, a little less white sugar (I sprinkle it on before baking), 3/4 butter and 1/4 shortening.

    Best cookie .... I add 1/4 cup more flour and use 3/4 butter 1/4 shortening. Makes for a softer, thicker cookie.... thanks so much for the recipe
