Portuguese Kale Soup Caldo Verde

- 1 small cabbage. chopped shopping list
- 2 bunches of kale, chopped shopping list
- 1 small onion chopped shopping list
- 1 can white or red kidney beans, drained shopping list
- 1 lb of Portuguese chorizo sausage shopping list
- 8 red potatoes, skin in and cubed shopping list
- 1 750 ml can beef broth shopping list
- 1 c water shopping list
- salt and pepper, to taste shopping list
How to make it
- In a large pot bring beef broth and 1 cup of water to a boil.
- Season with salt and pepper and add chorico and onions,
- Simmer over medium for 15 minutes.
- Next add the cabbage, kale, potatoes, and beans and bring to a boil.
- Simmer over medium for another 20 to 30 minutes.
- Let rest for an 1/2 hour. Serve with bread.
