Ingredients
  • TOMATILLO BBQ SAUCE
  • 2 1/2 lbs green tomatoes, coarsely chopped
  • 1 1/2 pounds tomatillos, husked and coarsely chopped
  • 2 cloves garlic, pressed
  • 1/2 - 1 c sugar
  • 1 c white vinegar
  • 1 large sweet onion, coarsely chopped (about 1 1/2 c)
  • 1 T dry mustard
  • 1 t salt
  • 1/2 t dried red pepper flakes, crushed
  • CHICKEN
  • 3 lb whole fryer, cut into quarters (cooks more evenly - or, remeove wings and drustickes ealier than breasts and thighs)
  • 2 c hickory, mesquite, or other wood chips
  • heavy duty aluminum foild
  • Water - ONLY if using CHARCOAL grill

Directions
  1. TOMATILLO BBQ SAUCE
  2. Cook all ingredients in a large stock pot over medium-low heat 2 hours or until green tomatoes and tomatillos are tender.
  3. Cool
  4. Process mixture, in batches, in a food processor or blender until smooth, stoppping to scrape down sides
  5. Serve over grilled chicken, fish or shrimp
  6. CHICKEN:
  7. On a GAS Grill
  8. Place 2 c wood chips in the center of a large square of heavy duty aluminum foild, fold into a rectangle and seal. Punch holes in top of packet
  9. Preheat one side of grill, leaving cener emtpy, for 20 minutes
  10. Place wood chip packet on cooking grate on heated side of grill
  11. Arrange chicken, skin side up, on cooking grate over unlit side of grill
  12. Cover with grill lid, let smoke for 2 hours 15 minutes, or until done (don't turn chicken)
  13. Baste with sauce
  14. On A Charcoal Graill
  15. Soak wood chips in cold water for 30 minutes, drain
  16. Prepare fire by piling charcola on each side of grill, leaving center empty
  17. Let charcoal burn 30 minutes or until flames disappear and coals turn white
  18. Sprinkle wood chips over hot colas
  19. Arrange chicken, skin side up, on cooking grate in center of grill (not directly over coals)
  20. Cover with grill lik, and cook 50 minutes - 1 hour, until done (don't turn chicken)
  21. Baste with sauce
