Smoked Chicken With Tomatillo Bbq Sauce

- tomatillo BBQ SAUCE shopping list
- 2 1/2 lbs green tomatoes, coarsely chopped shopping list
- 1 1/2 pounds tomatillos, husked and coarsely chopped shopping list
- 2 cloves garlic, pressed shopping list
- 1/2 - 1 c sugar shopping list
- 1 c white vinegar shopping list
- 1 large sweet onion, coarsely chopped (about 1 1/2 c) shopping list
- 1 T dry mustard shopping list
- 1 t salt shopping list
- 1/2 t dried red pepper flakes, crushed shopping list
- chicken shopping list
- 3 lb whole fryer, cut into quarters (cooks more evenly - or, remeove wings and drustickes ealier than breasts and thighs) shopping list
- 2 c hickory, mesquite, or other wood chips shopping list
- heavy duty aluminum foild shopping list
- water - ONLY if using CHARCOAL grill shopping list
How to make it
- TOMATILLO BBQ SAUCE
- Cook all ingredients in a large stock pot over medium-low heat 2 hours or until green tomatoes and tomatillos are tender.
- Cool
- Process mixture, in batches, in a food processor or blender until smooth, stoppping to scrape down sides
- Serve over grilled chicken, fish or shrimp
- CHICKEN:
- On a GAS Grill
- Place 2 c wood chips in the center of a large square of heavy duty aluminum foild, fold into a rectangle and seal. Punch holes in top of packet
- Preheat one side of grill, leaving cener emtpy, for 20 minutes
- Place wood chip packet on cooking grate on heated side of grill
- Arrange chicken, skin side up, on cooking grate over unlit side of grill
- Cover with grill lid, let smoke for 2 hours 15 minutes, or until done (don't turn chicken)
- Baste with sauce
- On A Charcoal Graill
- Soak wood chips in cold water for 30 minutes, drain
- Prepare fire by piling charcola on each side of grill, leaving center empty
- Let charcoal burn 30 minutes or until flames disappear and coals turn white
- Sprinkle wood chips over hot colas
- Arrange chicken, skin side up, on cooking grate in center of grill (not directly over coals)
- Cover with grill lik, and cook 50 minutes - 1 hour, until done (don't turn chicken)
- Baste with sauce
