How to make it

  • Drain the corn, and scoop the kernels into a serving bowl.
  • Thinly slice the radishes and add them to the corn.
  • Finely chop the coriander, and scrape it into the serving bowl as well.
  • Wearing gloves, finely mince the jalapeno(s), and add them to the vegetables. (To reduce the heat level further, discard the seeds.)
  • Pour lime juice and olive oil into a jar. Shake well to emulsify.
  • Dress the corn and radish mixture with the lime vinaigrette. Mix well.
  • Season with salt. If the corn is not very sweet, add a pinch of sugar, as well.
  • Serve as soon as possible.
