Spicy Corn and Radish Salad

- 1 15 oz can yellow whole kernel corn shopping list
- 1 bunch radishes shopping list
- 1/2 C fresh coriander leaves shopping list
- 1-2 fresh jalapeno peppers, to taste shopping list
- 1/4 C fresh lime juice shopping list
- 1/4 C olive oil shopping list
- salt to taste shopping list
- sugar (optional) shopping list
How to make it
- Drain the corn, and scoop the kernels into a serving bowl.
- Thinly slice the radishes and add them to the corn.
- Finely chop the coriander, and scrape it into the serving bowl as well.
- Wearing gloves, finely mince the jalapeno(s), and add them to the vegetables. (To reduce the heat level further, discard the seeds.)
- Pour lime juice and olive oil into a jar. Shake well to emulsify.
- Dress the corn and radish mixture with the lime vinaigrette. Mix well.
- Season with salt. If the corn is not very sweet, add a pinch of sugar, as well.
- Serve as soon as possible.
