Caribbean Shrimp Scallops and Peppers

- 1 pound sea scallops, rinsed and drained shopping list
- 1 pound large shrimp, peeled and deveined shopping list
- 1 cup red bell pepper, diced (a mixture of red and yellow is really nice) shopping list
- 3/4 cup red onion, minced shopping list
- 3 tablespoons green onion, sliced shopping list
- 1/3 cup orange juice shopping list
- 2 tablespoons lime juice shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 1 tablespoon jerk seasoning, or to taste shopping list
- 1 tablespoon fresh basil leaves, minced shopping list
How to make it
- Heat oil in a skillet with high heat. Add scallops and sear until done on each side. Don't overcook. Put scallops in medium bowl and chill. Quarter scallops when chilled.
- Saute shrimp in same pan until shrimp turn pink. Put in another bowl and chill.
- Combine marinade ingredients (o. j. through jerk seasoning). Combine shrimp, scallops, veggies and pour marinade over all. Toss gently, cover & refrigerate at least an hour, but I like it done the day before to let the flavors marry nicely.
