How to make it

  • Combine TVP and broth in a small dish. Let stand 10 minutes.
  • Saute onion in the olive oil over medium heat until golden.
  • Stir in diced tomatoes, salt, garlic powder, mustard powder, Tabasco and curry powder.
  • Cook, stirring, 1 minute.
  • Stir in the cornstarch, followed by the TVP, and cook 1 minute more.
  • Remove from heat and set aside to cool slightly.
  • Preheat oven to 450F.
  • Combine flour and curry powder in a large bowl.
  • Cut in shortening until mixture resembles coarse meal.
  • Beat together egg yolk and water.
  • Stir into flour mixture until it just forms a pastry dough.
  • Roll out on a floured surface and divide into 15 squares.
  • Place equal amounts of filling on a 1/2 of each square and fold pastry over it, pressing with fork to seal seams.
  • Place prepared pastries on baking sheets. Dock each pastry with a fork.
  • Bake for 12 minutes, serve immediately or cool completely on sheets for freezer storage.
