Ingredients
  • 6 large Brussels sprouts, halved
  • 85g (1/4 block) Mori-Nu Lite Silken Tofu, chopped
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp onion powder
  • 1 tbsp minced fresh parsley
  • 1 tbsp dried dill weed
  • 1/4 cup hot water
  • 3/4 cup cooked brown rice noodles, drained and kept hot
  • Fresh cracked black pepper

Directions
  1. Spray a glass baking dish lightly with olive oil.
  2. Add the sprouts to the pan and roast at 375 F for 10 minutes.
  3. Stir, and roast for 10 more minutes.
  4. Meanwhile, place tofu, garlic, lemon juice, salt, paprika, onion powder, parsley, dill and water in a food processor and puree smooth.
  5. Toss noodles and sprouts together in a bowl.
  6. Pour the tofu mixture overtop and serve with cracked black pepper.

If I don't let anyone see me cook this I know my family will love it. Healthy does't mean flavorless, but they areso afraid to try vegan foods. This sounds delicious.Thanks.
