Ingredients
  • 3 tbls olive oil
  • 1 onion, chopped
  • 2 jalapenos, seeded and chopped
  • 2 red peppers, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 6 cloves garlic, finely chopped
  • 2 tbls salt
  • 2 tbls chili powder
  • 1 tsp pepper
  • 1 tsp crushed red pepper
  • 3 bay leaves
  • 1 tsp allspice
  • 1 small can tomato paste
  • 1 can crushed tomatoes (28 oz.)
  • 1 can kidney beans (15 oz.)
  • 1 bottle clam juice (8oz.)
  • 4 oz. dark chocolate
  • 1/2 cup cilantro, chopped
  • 1/2 cup parsley, chopped
  • 1 1/2 lb. Bay scallops
  • 1 1/2 lb. small shrimp
  • 1 piece of cod, about 6-8 oz. cut into chunks

Directions
  1. In large pan, heat olive oil
  2. Add vegetables and saute for 2 -3 minutes
  3. Add dried herbs and spices and stir well
  4. Add tomato paste and cook for a minute or 2
  5. Add clam juice and crushed tomatoes
  6. Bring back to a simmer
  7. Add beans, chocolate, parsley and cilantro (I don't like cilantro so I always use all parsley)
  8. Add cod and cook a minute or 2
  9. Add scallops and cook another minute or so
  10. Add shrimp and cook until seafood is done
