Tomato And Yellow Pepper Salad

- 1/3 C tarragon white wine vinegar shopping list
- 3 Tbl canola oil shopping list
- 2 Tbl chopped fresh or 2 tsp dried oregano leaves shopping list
- 1/2 tsp sugar shopping list
- 1/2 tsp dry mustard shopping list
- 1/2 tsp salt shopping list
- 2 cloves garlic, finely chopped shopping list
- 2 Lrg yellow bell peppers, sliced into rings shopping list
- 3 Lrg tomatoes, sliced (about 1 1/2 lbs) shopping list
- spinach leaves shopping list
- 2 ounces feta, crumbled shopping list
How to make it
- Mix vinegar, oil, oregano, sugar, mustard, salt, pepper and garlic.
- Carefully place sliced peppers and tomatoes into a resealable freezer bag or glass dish
- Pour mixture over vegetables
- Cover and refrigerate 1 hour to blend flavors
- Line a serving plate with spinach leaves
- Drain vegetables; arrange on spinach
- Sprinkle with cheese
- Note: Color of peppers is your choice
- Note: Leftovers can be tossed with pasta and served hot or cold

This will go great this weeekend with my BBQ haveing a few military buddies up at the ranch going to cook every meal on the smoker, open fire, and BBQ.....ok so I might cheet a little I have a gas powered Blender......hahahahahahaha so this will go g...more
