Ingredients

1 il boneless chicken breast shreeded

6 large red or yellow bell peppers

2 - 6.2oz pkg Spanish flavored rice

1 - 16oz Thick & Chunky Salsa (divided)

1 1/2 cups diced tomatoes

1 1/2 chopped yellow onion

1/2 tsp paprika

1 tbsp adobo seasoning

2tbsp hot sauce Cholula

3 cups 4 cheese mexican blend cheese (divided)

Directions

Preheat oven 350

Grill Chicken Shreed once it's cooked

Prepare rice in large saute pan according to package

Once cooked stir half salsa

Add the tomatoes, onions, paprika, adobo seasoning, hot sauce, and the chicken

Heat on low season with pepper

Wash the peppers cut the top of the pepper remove seeds

In a pan add 1/2" water place pepper in the pan

Add some cheese to the bottom of the pepper

Fill the pepper with the mixture

Top each with remaining salsa and sprinkle with cheese place tops

Secure with toothpicks

Bake for 45min let stand for 5 min
