Recipe is from Legal Seafood Cookbook...I order these every time I go to Legals...Not a huge fish eater but these are incredibly comforting

Ingredients
  • 6 tbls. butter
  • 1/3 cup scallions, white parts only and chopped
  • 6 large potatoes, peeled and cut in same size pieces
  • 1 tbls sour cream
  • 8 oz. white-fleshed fish, such as cod, haddock, pollock, halibut or flounder, cooked and flaked
  • 1 egg
  • 1/4 tsp dry mustard
  • Salt and pepper to taste
  • 3 tbls. parsley, finely chopped
  • Dried bread crumbs
  • 1 tbls olive oil

Directions
  1. Cook potatoes
  2. Drain and mash with 1 tbls. butter and sour cream
  3. Combine with fish and set aside
  4. Heat 2 tbls. butter and saute scallions about 5 minutes, stirring frequently (don't brown)
  5. Set aside
  6. Beat egg
  7. Add mustard, a generous amount of salt, and pepper
  8. Stir in scallions and parsley
  9. Combine fish and potato mixture ( Do not use a mixer)
  10. Form into 8 cakes about 2 1/2 inch rounds
  11. Dip cake into bread crumbs
  12. Heat remaining butter and oil in large skillet
  13. Saute slowly for about 3 minutes on each side, or until they are lightly browned and cooked through

Never having had fish cakes, only CRAB cakes, these sound intriguing and really good! I think I'll makes these this week...have the fish in the freezer!
