I found this on another site by Sheri BDB.I tweaked it a bit.It is better than anything you'd find in a store and very easy to put together.Good for casseroles,tamales,enchiladas,eggs rancheros and other Mexican dishes.A lot of uses for it.

Ingredients
  • 1 28 OZ can tomatoes,plum,diced,whatever its going in a blender
  • 1 6 OZ can tomato paste
  • 1 medium onion,chopped
  • 1/2 cup water
  • 1/4 cup olive oil
  • 2 cloves garlic,crushed
  • 1/4 cup cilantro,chopped
  • 1 tsp. lemon juice
  • 1/4 cup green bell pepper,chopped
  • 2 carrots,peeled and chopped
  • 1 medium jalapeno,deribbed and deseeded,chopped
  • 1 Tbl. (or more to taste) cumin
  • 1 tsp.oregano
  • 1 tsp.chili powder
  • 1 tsp.paprika
  • 1/4 cup sugar or honey
  • salt,to taste

Directions
  1. Combine all ingredients in food processor or blender,blend until smooth.
  2. Pour sauce into a 2 qt. saucepan.Bring to a boil,then reduce heat to simmer and allow to cook for 20 minutes.
  3. Let cool if putting into jars and chilling.
  4. note:when I made this I had no jalapenos,so I used siracha,came out great.
  5. Also-recipe orginally called for 1/4 cup sugar;I used about a tablespoon of sugar & honey each.
