How to make it

  • Place a medium saute pan over med heat, and the olive oil, onion, bell pepper, scallion, ginger, garlic and jalepeno cooking until the veggies begin to sften, about 4 minutes
  • Add the mangoes, lime jucie and salt and stir until well-combined
  • Transfer to a bowl and let cool
  • Refrigerate until serving
