Grilled Rum Glazed Shrimp Recipe

  • 1/4 cup freshly squeezed lime juice, plus 1 tablespoon (3 limes)
  • 1/4 cup dark rum
  • 3 T dark brown sugar
  • 1 T finely grated peeled fresh ginger
  • 1 1/2 tsp cornstarch
  • 32 medium shrimp, peeled and deveined with tails on
  • coarse salt and fresh ground pepper
  • 1 ripe but firm mango, peeled and sliced lengthwise into eight slivers
  • 2 T canola oil, plus more for grill grates
  • 2 bunches watercress, tough stems trimmed (or a green salad)

Directions
  1. Make glaze: In a small saucepan, combine 1/4 cup lime juice, rum, sugar and ginger; bring to a boil over high heat
  2. Reduce heat; simmer, wisking occasionally, until slightly thickened, about 3 minutes.
  3. In a small bowl, wisk together cornstarch and 1 T water; stir in to lime-juice mixture.
  4. Cook, stirring, until thickened, about 30 seconds
  5. Remove from heat; let cool
  6. Thread shrimp onto 8 skewers, using 4 shrimp per skewer (pre-soak wooden skewers in water for 20 minutes to prevent them from burning)
  7. Season on both sides with salt and pepper.
  8. Thread mango slivers onto 4 skewers, using 2 pieces per skewer.
  9. Brush shrimp and mango all over with the glaze.
  10. Heat grill to med-high; oil grates
  11. Place skewers on grill; cook, turning once, until blackened in spots and shrimp are opaque, about 4 minutes.
  12. In a large bowl, whisk together remaining tablespoon lime juice with oil; season with salt and pepper. Add watercress or salad greens; toss to coat.
  13. To serve, divide watercress or greens among 4 plates; top each with 2 shrimp skewers and 1 mango skewer.
