this is a recipe from Pinon Grill, in Scottsdale, Arizona... I have tweeked it a little to suit my tastes... the 2 servings means 2 cups.. and the prep time doesn't include the chill time..

Ingredients
  • 1 Jalapeno Pepper, stem removed, seeded, and minced.. can add more according to your taste..
  • 1 cup Fresh tomato, minced
  • 1/2 red onion, minced
  • 2 TBSP. fresh cilantro, chopped fine
  • 1 TBSP. fresh squeezed lime juice
  • 1 TBSP. olive oil
  • 1 teasp. salt
  • 1 teasp. brown sugar
  • 1 cup fresh ripe peach, peeled, and minced

Directions
  1. combine all ingredients and let sit at least an hour to meld the flavors.
  2. serve this with grilled meats, chicken or seafood..
  3. heat scale is mild
  4. kick it up with more Jalapeno or a hotter pepper..
