How to make it

  • 1. Fry bacon in a large skillet until crsp. Drain, break into pieces and set aside.
  • 2. Pour off excess drippings and saute onion rings in remaining drippings. Cook onions, stirring ocassionally, over medium heat until they are golden brown. Remove and set aside.
  • 3. Put about 1 tablespoon of olive oil into the skillet. Pour in snapped green beans and saute for about 8-10 minutes. They should remain crisp but cooked through.
  • 4. Pour into serving bowl and top with onions and bacon.

    I do all of this in an iron skillet. Whether on the grill or inside. Old fahioned but dependable. This is a great side dish for almost any meal.
