Ingredients
  • 16 oz. angel hair pasta
  • 2 Tbl olive oil
  • 2 lbs beef sirloin, thinly sliced
  • 1 Lrg red onion, sliced
  • 8 oz. mushrooms, sliced
  • 2 each medium yellow and medium green summer squash, sliced
  • 1 tsp minced garlic
  • 2 (14 1/2 oz) cans of diced tomatoes, drained
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper

Directions
  1. Cook pasta according to package directions
  2. Rinse with cool water, drain, cover to keep warm
  3. Heat oil in a large skiet over medium high until hot
  4. Cook beef and onion in hot oil, stirring continually, just until beef is slightly pink, about 3-5 minutes
  5. Add mushrooms. squash and garlic to mixture
  6. Saute until vegetables are crisp tender, about 5 to 7 minutes
  7. Add tomatoes; coo until heated through
  8. Stir in salt, oregano and pepper
  9. Place equal portions of pasta on 6 to 8 serving plates
  10. Spoon portions of beef mixtures over pasta and toss lightly
