Peanut Butter Honey Refrigerator Cookie Recipe

If ya didn't know, now ya know...I love peanut butter. Not a lot of sugar in these. Prep time doesn't include chill time. Enjoy!

Ingredients
- 2/3 cup peanut butter (I'm a choosy mother....I buy Simply Jif!)
- 1/2 cup sugar
- 1/2 cup honey
- 1 egg
- 2 1/4 cups BISQUICK baking mix
- 1/4 teaspoon baking soda
- 1/2 cup chopped peanuts
Directions
- Mix peanut butter, sugar, honey and egg
- Mix in remaining ingredients
- Divide dough into halves; shape each half into roll about 1 1/2 inches in diameter.
- Wrap and refrigerate at least 8 hours
- Heat oven to 400 degrees F
- Cut rolls into 1/8 to 1/4 inch slices
- Place about 1 inch apart on ungreased cookie sheet
- Bake until light brown, about 8 minutes
- Immediately remove from cookie sheet
- Makes about 6 dozen cookies depending on the size...
