If ya didn't know, now ya know...I love peanut butter. Not a lot of sugar in these. Prep time doesn't include chill time. Enjoy!

Ingredients
  • 2/3 cup peanut butter (I'm a choosy mother....I buy Simply Jif!)
  • 1/2 cup sugar
  • 1/2 cup honey
  • 1 egg
  • 2 1/4 cups BISQUICK baking mix
  • 1/4 teaspoon baking soda
  • 1/2 cup chopped peanuts

Directions
  1. Mix peanut butter, sugar, honey and egg
  2. Mix in remaining ingredients
  3. Divide dough into halves; shape each half into roll about 1 1/2 inches in diameter.
  4. Wrap and refrigerate at least 8 hours
  5. Heat oven to 400 degrees F
  6. Cut rolls into 1/8 to 1/4 inch slices
  7. Place about 1 inch apart on ungreased cookie sheet
  8. Bake until light brown, about 8 minutes
  9. Immediately remove from cookie sheet
  10. Makes about 6 dozen cookies depending on the size...
