How to make it

  • In a food processor blend all the vinaigrette ingredients except peanuts and mint.
  • Wash the carrots with a brush and grate into a large bowl.
  • Add the dressing and marinate for 20 minutes before serving.
  • Garnish with chopped peanuts and mint.

    I just added this to my weeks recipe list. This is going to be great! I grow my own mint and cilantro so this will be a new way to use them! I gotta post my thai satay casserole. There is something that is missing or doesnt belong and I bet someone here will figure it out!
