- 6 medium waxy potatoes (yukon gold or red spuds) shopping list
- 1 pound parsnips shopping list
- 1/2 cup sour cream shopping list
- 3 mashed cloves garlic shopping list
- scant pinch of nutmeg shopping list
- salt and pepper shopping list
How to make it
- peel or leave skins on potatoes, boil until sharp knife pierces easily
- strain, reserve some of the boiling water for adding to finished dish if necessary
- in separate pan boil the peeled parsnips until tender, strain
- mash potatoes and parsnips together, add mashed garlic cloves
- set aside 5 minutes to let garlic "cook"
- add sour cream , nutmeg and salt and pepper, thin with some potato water if necessary
- serve with a knob of butter melted over
