How to make it

  • peel or leave skins on potatoes, boil until sharp knife pierces easily
  • strain, reserve some of the boiling water for adding to finished dish if necessary
  • in separate pan boil the peeled parsnips until tender, strain
  • mash potatoes and parsnips together, add mashed garlic cloves
  • set aside 5 minutes to let garlic "cook"
  • add sour cream , nutmeg and salt and pepper, thin with some potato water if necessary
  • serve with a knob of butter melted over
