Ingredients
  • 2 pounds Brussel sprouts
  • 1 tbsp chopped fresh thyme or 1 tsp dried
  • 1 tbsp chopped fresh oregano leaves or 1 tsp dried
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar

Directions
  1. Preheat oven to 425 degrees F.
  2. Cut the bottoms off the brussel sprouts and trim off any damaged outer leaves. Soak them in a bowl of cold water for a few minutes and drain them well.
  3. Cut them in half and put them into a roasting pan. Add the thyme, oregano, garlic powerder, salt and pepper. Add the olive oil and vinegar and toss everything well to coat.
  4. Put the roasting pan into the oven and cook for 20 minutes. Give everything a good stir and cook for 25 minutes more, or until the brussel sprouts are nicely browned and caramelized.

I love brussel sprouts! I usually make them with carrots just because I love the colours together. These sounds fabulous! I can see doing them with carrots as well! Yum! X0

I like the idea of adding the carrots to them. I'll try that as I have difficulty getting my 6 year old to eat them in any way, shape or form. My 9 year old loves them raw or cooked.
