Spinach Pie

- 1 lb italian sausage (mild works best) shopping list
- 1 15 oz. container of ricotta cheese shopping list
- 1 10 package of Chopped spinach shopping list
- 1 8 oz. container of chive/Onion cream cheese shopping list
- 1 cup Mozzarella shopping list
- 3 eggs shopping list
- 1 package Pillsbury pie crust shopping list
How to make it
- Preheat oven to 400 degrees F.
- Thaw out package of spinach; set aside.
- Cook sausage into crumbles and drain.
- Drain the spinach very very well. The best way is to just use an old CLEAN dish towel, put the spinach in it, and wring it out. Get the spinach as dry as possible.
- Mix spinach, cheeses, 2 eggs, and sausage together.
- Prepare pie crust as directed on the package and put 1 layer into 10 inch pie plate.
- Fill pie with mixture and cover with remaining crust.
- Crimp the edges of the crust and cut a small x shaped slit on top to allow steam to escape.
- Beat remaining egg, brush on top of pie, then bake for 35-40 minutes.
- About 15 minutes in, you may want to cover the edge of the crust with tinfoil to prevent overcooking.
