Spinach Pie Recipe
This is a really good dish that will get you to eat spinach even if you don't like it cooked, like me. You can even turn this into a low carb recipe by omitting the crust.

Ingredients
  • 1 lb Italian Sausage (mild works best)
  • 1 15 oz. container of Ricotta Cheese
  • 1 10 package of Chopped Spinach
  • 1 8 oz. container of Chive/Onion Cream Cheese
  • 1 cup Mozzarella
  • 3 Eggs
  • 1 package Pillsbury Pie Crust

Directions
  1. Preheat oven to 400 degrees F.
  2. Thaw out package of spinach; set aside.
  3. Cook sausage into crumbles and drain.
  4. Drain the spinach very very well. The best way is to just use an old CLEAN dish towel, put the spinach in it, and wring it out. Get the spinach as dry as possible.
  5. Mix spinach, cheeses, 2 eggs, and sausage together.
  6. Prepare pie crust as directed on the package and put 1 layer into 10 inch pie plate.
  7. Fill pie with mixture and cover with remaining crust.
  8. Crimp the edges of the crust and cut a small x shaped slit on top to allow steam to escape.
  9. Beat remaining egg, brush on top of pie, then bake for 35-40 minutes.
  10. About 15 minutes in, you may want to cover the edge of the crust with tinfoil to prevent overcooking.

This sounds really great! I just saw a huge container of fresh spinach the other night in the store and thought I should buy some. I'll have to try this!
