This is one of the recipes from the book I bought that I talked about earlier. It's called "Sunday Dinner Cookbook" and was published in 1969. These were meals that were meant to be made by women after church. It's a very charming book.

  • 1 cup uncooked rice
  • 1 onion, sliced
  • 2 tsp parsley, snipped
  • 1/2 cup celery, sliced
  • 2 cups tomato juice
  • 1 cup water
  • 4 or more pork chops

Directions
  1. In deep pan or iron skillet place uncooked rice. Place onion, parsley, and celery on top of rice. Pour tomato juice and water over. Place pork chops on top of rice mixture and bake covered at 350 for 1 hour.

That looks like my kind of recipe. I always wondered though, why we were supposed to have a fancy dinner on Sunday that somehow was supposed to cook itself while we were at church! We usually had pot roast since you could cook it slowly.
