How to make it

  • Place package of spinach on paper toweling on floor of oven.
  • Microwave on high 4 to 6 minutes or until defrosted.
  • Drain well.
  • Set aside.
  • In a 2-quart casserole or bowl microwave butter, uncovered, on high 45 to 90 seconds.
  • Blend in flour, salt,mudtard, paprika, nutmeg, and pepper.
  • Stir in milk.
  • Microwave, uncovered, on high 4 to 6 minutes or until thickened, stirring after 2 minutes and then every minute.
  • Stir in cheese until melted.
  • Stir in spinach.
  • Beat egg yolks slightly.
  • Slowly add to spinach mixture, stirring cinstantly.
  • Set aside.
  • In a large bowl beat the egg whites with cream of tartar until soft peaks form.
  • Gently fold into sauce mixture.
  • Pour into an ungreased 8 X 1 1/2 or 9 X 1 1/2 inch round baking dish.
  • Microwave, uncovered, on 30% (med-low) 15 to 40 minutes or until just set in center, rotating dish 3 or 4 times as needed.
  • Makes 6 to 8 servings.
