Ingredients
  • 1 10 ounce package frozen chopped spinach
  • 1/4 cup butter or margarine
  • 1/4 cup all-putpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon paprika
  • Dash of ground nutmeg
  • Dash pepper
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese (2 ounces)
  • 4 egg yolks
  • 4 egg whites
  • 1/4 teaspoon cream of tartar

Directions
  1. Place package of spinach on paper toweling on floor of oven.
  2. Microwave on high 4 to 6 minutes or until defrosted.
  3. Drain well.
  4. Set aside.
  5. In a 2-quart casserole or bowl microwave butter, uncovered, on high 45 to 90 seconds.
  6. Blend in flour, salt,mudtard, paprika, nutmeg, and pepper.
  7. Stir in milk.
  8. Microwave, uncovered, on high 4 to 6 minutes or until thickened, stirring after 2 minutes and then every minute.
  9. Stir in cheese until melted.
  10. Stir in spinach.
  11. Beat egg yolks slightly.
  12. Slowly add to spinach mixture, stirring cinstantly.
  13. Set aside.
  14. In a large bowl beat the egg whites with cream of tartar until soft peaks form.
  15. Gently fold into sauce mixture.
  16. Pour into an ungreased 8 X 1 1/2 or 9 X 1 1/2 inch round baking dish.
  17. Microwave, uncovered, on 30% (med-low) 15 to 40 minutes or until just set in center, rotating dish 3 or 4 times as needed.
  18. Makes 6 to 8 servings.
