Spinach Puff

- 1 10 ounce package frozen chopped spinach shopping list
- 1/4 cup butter or margarine shopping list
- 1/4 cup all-putpose flour shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon dry mustard shopping list
- 1/8 teaspoon paprika shopping list
- Dash of ground nutmeg shopping list
- Dash pepper shopping list
- 1 cup milk shopping list
- 1/2 cup shredded cheddar cheese (2 ounces) shopping list
- 4 egg yolks shopping list
- 4 egg whites shopping list
- 1/4 teaspoon cream of tartar shopping list
How to make it
- Place package of spinach on paper toweling on floor of oven.
- Microwave on high 4 to 6 minutes or until defrosted.
- Drain well.
- Set aside.
- In a 2-quart casserole or bowl microwave butter, uncovered, on high 45 to 90 seconds.
- Blend in flour, salt,mudtard, paprika, nutmeg, and pepper.
- Stir in milk.
- Microwave, uncovered, on high 4 to 6 minutes or until thickened, stirring after 2 minutes and then every minute.
- Stir in cheese until melted.
- Stir in spinach.
- Beat egg yolks slightly.
- Slowly add to spinach mixture, stirring cinstantly.
- Set aside.
- In a large bowl beat the egg whites with cream of tartar until soft peaks form.
- Gently fold into sauce mixture.
- Pour into an ungreased 8 X 1 1/2 or 9 X 1 1/2 inch round baking dish.
- Microwave, uncovered, on 30% (med-low) 15 to 40 minutes or until just set in center, rotating dish 3 or 4 times as needed.
- Makes 6 to 8 servings.
