Spinach Puff Recipe

Ingredients

1 10 ounce package frozen chopped spinach

1/4 cup butter or margarine

1/4 cup all-putpose flour

3/4 teaspoon salt

1/4 teaspoon dry mustard

1/8 teaspoon paprika

Dash of ground nutmeg

Dash pepper

1 cup milk

1/2 cup shredded cheddar cheese (2 ounces)

4 egg yolks

4 egg whites

1/4 teaspoon cream of tartar

Directions

Place package of spinach on paper toweling on floor of oven.

Microwave on high 4 to 6 minutes or until defrosted.

Drain well.

Set aside.

In a 2-quart casserole or bowl microwave butter, uncovered, on high 45 to 90 seconds.

Blend in flour, salt,mudtard, paprika, nutmeg, and pepper.

Stir in milk.

Microwave, uncovered, on high 4 to 6 minutes or until thickened, stirring after 2 minutes and then every minute.

Stir in cheese until melted.

Stir in spinach.

Beat egg yolks slightly.

Slowly add to spinach mixture, stirring cinstantly.

Set aside.

In a large bowl beat the egg whites with cream of tartar until soft peaks form.

Gently fold into sauce mixture.

Pour into an ungreased 8 X 1 1/2 or 9 X 1 1/2 inch round baking dish.

Microwave, uncovered, on 30% (med-low) 15 to 40 minutes or until just set in center, rotating dish 3 or 4 times as needed.

Makes 6 to 8 servings.
