French Buckwheat Crepes With Mushrooms and Herbs

- 1/2 cup buckwheat flour shopping list
- 1 cup whole wheat pastry flour shopping list
- 3 egg whites lightly beaten shopping list
- 1 whole egg shopping list
- 1-1/2 cups milk shopping list
- 1/2 teaspoon salt shopping list
- 2 teaspoons safflower oil shopping list
- 4 cups sliced mushrooms shopping list
- 1/2 cup minced green onions shopping list
- 1 cup asparagus tips shopping list
- 1 teaspoon nutmeg shopping list
- 1/2 teaspoon dried thyme shopping list
- 1/4 cup applejack or calvados brandy shopping list
- 1 teaspoon safflower oil to coat baking dish shopping list
- 1/2 cup grated low fat jack or mozzarella shopping list
How to make it
- In a blender puree flours, egg whites, whole egg, milk and salt until consistency of heavy cream.
- In crepe pan over medium heat 1/2 teaspoon oil until a drop of water sizzles on surface of pan.
- Ladle 1/4 cup batter onto pan then cook crepe 60 seconds on each side.
- Set cooked crepes on a plate and continue until all batter is used.
- Preheat broiler.
- In skillet over medium heat warm remaining oil and sauté mushrooms and onions 5 minutes.
- Stir frequently then add asparagus, nutmeg, thyme and applejack.
- Cook 2 minutes stirring frequently.
- Lightly oil a baking dish then spoon 2 tablespoons filling into center of each crepe.
- Roll and lay seam side down in baking dish.
- Sprinkle grated cheese over top and broil until lightly browned and bubbling.
