Chilled Cucumber And Tomato Soup With Fresh Dill Recipe

Ingredients
  • 1 quart low-fat plain yogurt
  • 2 cups chicken broth
  • 1 small seedless cucumber, diced, partially peeled, lightly salted
  • 2 medium plum tomatoes, diced, lightly salted
  • 1/4 cup sliced green onions
  • 1/4 cup extra virgin olive oil
  • 2 Tbs. rice wine vinegar
  • 2 tsps. chopped fresh dill
  • Salt and ground black pepper

Directions
  1. Mix all ingredients in a large bowl. Salt and pepper to taste. Refrigerate until ready to serve.
  2. 148 calories per serving
