Tamale Pie

- Crust shopping list
- 6 cps water shopping list
- 2 tsp salt shopping list
- 2 cps yellow corn meal shopping list
- 2 eggs shopping list
- 1 tbs butter shopping list
- Filling shopping list
- 1 tbs olive oil shopping list
- 1 lb. lean ground beef shopping list
- 2 tbs chili powder shopping list
- 1/2 cp chopped green peppers shopping list
- 3/4 cp chopped onion shopping list
- 2 tbs chopped garlic shopping list
- 6 ears fresh corn (1 can cream style corn can be used) shopping list
- 1/2 cp chopped celery shopping list
- 1 lb chan diced tomatoes shopping list
- 1/2 cp chopped black olives shopping list
How to make it
- saute vegetables in olive oil
- add beef and gently cook until done
- cut corn kernels from cobs and scrape cop to get the milky part of the corn. You can substitute 1 can creamed corn but the fresh tastes best
- save 2 tbs of the chopped olives
- add remaining ingredients stir and cook about 25 minutes
- While filling is cooking mix corn meal with 2 cps cold water
- bring remaining water to a boil
- add salt and corn meal
- cook til very thick
- cool slightly and add well beaten eggs and butter
- spread half of corn meal mixture in bottom and sides of a three quart casserole dish
- pour in meat filling
- spread remaining corn meal over top
- can add 1 cp cheddar cheese to top if you like
- sprinkle remaining olives over top
- bake in 350 degree oven about 30 minutes or untill corn meal begins to brown.
- Yum yum. Grat with a green salad`
