Tamale Pie Recipe
This is a great casserole and is easy to make, tastes delicious and keeps well in fridge.

Ingredients
  • Crust
  • 6 cps water
  • 2 tsp salt
  • 2 cps yellow corn meal
  • 2 eggs
  • 1 tbs butter
  • Filling
  • 1 tbs olive oil
  • 1 lb. lean ground beef
  • 2 tbs chili powder
  • 1/2 cp chopped green peppers
  • 3/4 cp chopped onion
  • 2 tbs chopped garlic
  • 6 ears fresh corn (1 can cream style corn can be used)
  • 1/2 cp chopped celery
  • 1 lb chan diced tomatoes
  • 1/2 cp chopped black olives

Directions
  1. saute vegetables in olive oil
  2. add beef and gently cook until done
  3. cut corn kernels from cobs and scrape cop to get the milky part of the corn. You can substitute 1 can creamed corn but the fresh tastes best
  4. save 2 tbs of the chopped olives
  5. add remaining ingredients stir and cook about 25 minutes
  6. While filling is cooking mix corn meal with 2 cps cold water
  7. bring remaining water to a boil
  8. add salt and corn meal
  9. cook til very thick
  10. cool slightly and add well beaten eggs and butter
  11. spread half of corn meal mixture in bottom and sides of a three quart casserole dish
  12. pour in meat filling
  13. spread remaining corn meal over top
  14. can add 1 cp cheddar cheese to top if you like
  15. sprinkle remaining olives over top
  16. bake in 350 degree oven about 30 minutes or untill corn meal begins to brown.
  17. Yum yum. Grat with a green salad`
