How to make it

  • saute vegetables in olive oil
  • add beef and gently cook until done
  • cut corn kernels from cobs and scrape cop to get the milky part of the corn. You can substitute 1 can creamed corn but the fresh tastes best
  • save 2 tbs of the chopped olives
  • add remaining ingredients stir and cook about 25 minutes
  • While filling is cooking mix corn meal with 2 cps cold water
  • bring remaining water to a boil
  • add salt and corn meal
  • cook til very thick
  • cool slightly and add well beaten eggs and butter
  • spread half of corn meal mixture in bottom and sides of a three quart casserole dish
  • pour in meat filling
  • spread remaining corn meal over top
  • can add 1 cp cheddar cheese to top if you like
  • sprinkle remaining olives over top
  • bake in 350 degree oven about 30 minutes or untill corn meal begins to brown.
  • Yum yum. Grat with a green salad`
