Apple Walnut Pecan Bundt Cake Recipe
A dense moist apple cake with plenty of nuts and a lovely glaze topping. One of my favorite Bundt cake recipes.

Ingredients
  • 11/2c vegetable oil
  • 11/2c granulated sugar
  • 1/2c brown sugar
  • 3 eggs
  • 1T vanilla
  • 3c all purpose flour
  • 1T cinnamon
  • 1tsp baking soda
  • 3/4tsp nutmeg
  • 1/2tsp salt
  • 4c apples, peeled, cored and diced
  • 3/4c chopped walnuts
  • 3/4c chopped pecans
  • ICING
  • 1/4c butter
  • 1/4c brown sugar
  • 1/4c granulated sugar
  • 1/4c heavy cream
  • 1tsp vanilla

Directions
  1. Beat oil and sugars together. Beat in eggs one at a time, then the vanilla.
  2. Sift dry ingredients together then stir into batter.
  3. Fold in the diced apples and nuts.
  4. Pour into a well greased and floured Bundt pan.
  5. Bake at 325F for about 60 mins.
  6. Cool, remove from pan and place on cooling rack with a tray underneath.
  7. ICING
  8. Bring all ingredients to a boil, cook until slightly thickened and a dark in color.
  9. Cool slightly then spoon over cake.

I love this recipe and it is better than any cake I have baked!
OOOH!! This cake is so good, we don't even put the Icing on it! MMMMM

I used Red Delicious apples. 1 apple equals 1 cup LOL. They gave the apples some slightly soft/crunchy character instead of just a baked apple flavor.

Alterations


Need to change the temp to cook the cake at. I baked for 1 hour at 325 it it was still slightly gooey near the top (aka the bottom after it's flipped out) I recommend baking at 350 for 1 hour.
