How to make it

  • Wash the beans and snip off the ends.
  • Steam the beans for about 5 minutes, until tender-crisp.
  • Immediately rinse the beans in cold water so they don't continue to cook.
  • Combine the beans, onions, basil, oil, salt and pepper in an attractive bowl.
  • Now you have to decide: add the vinegar now so that the salad has an interesting "pickled" flavor, or add the vinegar just before serving so that the green beans retain their bright color.
  • I usually choose to add the vinegar just before serving.
  • Serve at room temperature.

    Delicious!! Love the simple fresh taste of this salad which truly is an ideal side for 'summertime' dishes. Would be great with steamed asparagus too.

    Mmm, a bit like pickled beans? I love vinegar on beans... this sounds like a great dish to bring to a bbq.
