This is a very simple recipe. Fairly fat free and very tasty. My wife is not a big lamb fan but really enjoys this dish.

Ingredients
  • 1 Tbsp Olive oil
  • ½ onion chopped
  • 1 lb ground lamb
  • 1 clove garlic minced
  • 1 large carrot (match sticks)
  • 1 Can green beans (drained)
  • 1 Can corn (drained)
  • 2 cups mashed potatoes (or more) enough to cover 2” – 2 1/2 “ thick on top of casserole
  • ½ Cup shredded cheese (optional) mix with the mashed potatoes
  • 1 tsp rosemary
  • 1 tsp thyme
  • ½ tsp pepper

Directions
  1. Cook ground lamb drain and set aside to cool
  2. When cool to the touch break up the lamb so that it has no large parts.
  3. Sauté onion and garlic in olive oil until tender
  4. Add carrot, green beans, corn, and spices simmer until hot
  5. Spray a 9” backing dish
  6. Layer ground lamb, vegetables, and mashed potatoes
  7. Bake at 350 for 30 minutes
