Prize-winning Warm Yam Salad

- 1 1/2 lbs. yam or sweet potato cut into 3/4 " cubes (about 3 cups) shopping list
- 3 tbsp. olive oil shopping list
- 1/4 cup brown sugar, packed shopping list
- 1 cup sliced fresh mushrooms shopping list
- 10 oz. bag of spinach, torn into bite size pieces shopping list
- 2 garlic cloves, minced shopping list
- 3 tbsp. olive oil shopping list
- 1 cup crumbled fet cheese shopping list
- 1/4 cup pine nuts shopping list
- 2 tbsp. balsamic vinegar shopping list
How to make it
- Combine first 3 ingredients in medium bowl. Transfer to ungreased baking sheet. Bake in 350 F oven for 45 minutes, stirring occasionally until tender and golden. Transfer to large bowl. Set aside.
- Sate next 3 ingredients in second amount of olive oil in large frying pan on medium-high for 3 to 5 minutes until mushrooms are soft. Add to yam mixture.
- Sprinkle feta cheese and pine nuts over top. Drizzle with vinegar. Toss until well coated. Serve warm.
