Grilled Tomato And Fresf Mozzarella Bruschetta Recipe

Ingredients

3 beefsteak or heirloom tomatoes

1c olive oil

1 clove garlic ,chopped

1/2 bunch cilantro

1/2c basil leaves,roughly torn

1 loaf Italian bread sliced

1/2lb fresh mozzarella,sliced

salt and pepper

Directions

In a mixing bowl,combine 3/4c olive oil,cilantro and garlic

Coat the tomatoes with the marinade and place on the grill Grill on all sides for 3-4 mins. Remove tomatoes and dice.

Slice 1 loaf of Italian bread and brush both sides with olive oil. Place on the grill for approximately 30 seconds. Flip and repeat. Season lightly with salt and pepper. Top with tomato and finish with 1 thin slice of fresh mozzarella. Garnish with torn basil leaves.

This marinade is also nice for just a tomato or tomato and mozzatella salad(do not dice tomatoes,chunk and chop mozzarella)
