New Bedford Flounder Roll Ups Recipe

Ingredients
  • 6 large flounder fillets
  • 4 strips of bacon
  • ¼ C melted butter
  • 3 C cornbread crumbs
  • ¼ tsp chervil
  • ¼ tsp dried tarragon leaves
  • Hot water
  • Butter

Directions
  1. Cook bacon until crisp; drain on paper towels
  2. Measure ¼ C bacon drippings and add to melted butter
  3. Combine cornbread crumbs, bacon, herbs and butter mixture; mix well
  4. Add enough hot water to make stuffing as moist as desired
  5. Place a spoonful of stuffing on each fillet; roll up firmly
  6. Place seam side down in a sprayed baking dish; dot generously with butter
  7. Bake at 375 for 25 minutes or until fish flakes easily with a fork
