Mojito Time Again Recipe

Ingredients

1/2 cup fresh mint leaves plus some for garnish

2 limes cut into wedges plus some for garnish

2 cups crushed ice plus some for serving

1 cup lime mint syrup (recipe to follow)

1 liter white rum

1/2 cup fresh lime juice

club soda

Lime Mint Syrup:

2 cups sugar

2 cups water

2 limes zested

1/2 cup fresh mint leaves

Directions

For Syrup

Bring the sugar and water to a boil in medium saucepan

cook until sugar is dissolved about a minute

Remove from heat and stir in lime zest and mint

let sit at room temp. for 30 minutes to let flavors infuse

pour into jar through strainer to remove zest and mint

cover and refrigerate until cold

For Cocktail

Put 2 cups of crushed ice into a large pitcher with mint leaves and limes

using a wooden spoon break up the mint and limes with ice

careful if using glass pitcher! add lime mint syrup, rum, lime juice

top off with club soda, pour into glasses add more ice

garnish with lime wedge and mint leaves really special if you add sugar cane stir!
