Baked Cod With Tomatoes And Provolone

- 1 tblsp olive oil shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp salt shopping list
- 1 lb cod fillets shopping list
- 2 tblsp chopped fresh basil,or 1 tblsp dried shopping list
- 2 garlic cloves,minced shopping list
- 1 14 ounce can no salt added whole tomatoes,drained and chopped shopping list
- 1 small zucchini,thinly slice diagonally shopping list
- 2 ounces provolone cheese,cut inmto strips shopping list
How to make it
- preheat oven to 400
- spread oil in bottom of a casserole
- sprinkle the pepper,1/8 tsp of salt over both sides of the fillets
- arrange the fillets inthe casserole in a single layer
- sprinkle the basil and garlic over the fish
- then cover the fish with tomatoes
- arrange the zucchini in a fish scale pattern down the center of the dish
- sprinkle the remaing 1/8 tsp of salt o ver them
- cover the dish with foil and bake 10 min
- removethe foiland place the stripsof provolone in crisss cross pattern over the zucchini
- cover the dish againand bake until fish feels firm to the touch
- 3 to 5 min
- serve hot
