Oatmeal Scones Recipe
This is an adaptation of a recipe from a cookbook on baking.

Ingredients
  • 1 cup oats (Old fashioned or quick cooking)
  • 3/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 6 tablespoons sugar
  • 2 Tablespoons ground flax seed (flax meal)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 10 Tablespoons cold butter, cut into small pieces
  • 3/4 cup diced apricots or other dried fruit of choice (dried cranberries, dried blueberries, golden raisins, etc)
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 Tablespoons melted butter

Directions
  1. Combine dry ingredients (first 8 ingredients), cut butter in with a pastry blender.
  2. Fold in apricots.
  3. Combine egg and butter milk.
  4. Fold into dry mixture and combine until it just comes together, without over mixing.
  5. Place on a lightly floured board and pat into a circle about 1 1/4 inches thick by about 9 inches in diameter. Cut into 8 wedges.
  6. Place on greased baking sheet, brush with melted butter.
  7. Bake at 375 for 25-30 minutes or until tops are lightly browned.
